Located on Jingxue Road in Shanhua, Tainan, "Shuanghe Japanese Ramen" is a ramen shop recommended by a colleague. The menu is no longer attached, as it now uses QR codes for ordering.
This time, I ordered the spicy chicken ramen and added pork back fat. Overall, the broth of this ramen is indeed quite good—rich and with a hint of spiciness. Upon taking a sip, one can feel the heat travel directly to the throat, and the flavor is very pronounced. It’s quite spicy, but it doesn’t feel overly hot; instead, it finds a unique texture in this balance.
The chashu in the ramen is also worth mentioning. The meat is tender and pairs very well with the broth. Especially with the addition of pork back fat, the overall texture of the ramen becomes richer, enhancing the overall layers of flavor. The chicken broth has also been well-prepared, with no chicken smell at all, which is uncommon in many chicken ramen dishes.
However, the spiciness of this ramen should not be underestimated. While it feels just right when eating, the "afterburn" the next day can be quite memorable; it really packs a punch.
In summary, Shuanghe Japanese Ramen is indeed satisfying in terms of flavor, highly recommended!
