The Cantonese stir-fried noodles are first etched into my memory as a group game. When I first stepped into an authentic Hong Kong restaurant, I recognized it among the dazzling array of dishes on the menu.
It was at Cheung Fat Tea Restaurant that I first experienced the "Cantonese stir-fried noodles." Since then, I have tried them at several other restaurants, but Cheung Fat's version remains the benchmark in my mind.
This dish features an abundant mix of pork, seafood, and vegetables, with a thickened sauce, also known as the "topping." It has a slightly salty and savory flavor, which is somewhat similar to Japanese dipping noodles.
The Cheung Fat version of the Cantonese steamed noodles is very crispy after being fried, and the best way to enjoy it is immediately after it is served. It resembles instant noodles or Prince noodles; if the noodles sit in the sauce for too long, they will soften and affect the texture.
At Cheung Fat, hot tea is provided for dine-in guests, and you can ask the waitstaff for more tea. The dining space on the second floor is quite large, so it usually doesn’t get full, allowing for easy seating.
