Hakata Red Noodle Factory is located in the middle of the Shiwei Night Market, just in the alley directly opposite Marukichizaemon, another night market ramen shop in Shimo Shinjo.
If I really had to compare the preferences of these two restaurants, in terms of deliciousness, I would choose Red Noodle Factory.
Today I enjoyed Gekisho Tonkotsu Ramen, Fujiwara Miso Ramen, and the mixed oden of my choice. The total cost is about 700 yuan.

The store deliberately differentiates the prices of ramen. If you want to order ramen, just ask the price directly, so the store will know what kind of noodles and configuration it is. This is a very lazy way of ordering.
For example, for ramen, I only said I wanted a bowl of 230 and 220 each.
Spicy Tonkotsu Ramen:
The rich tonkotsu soup base goes well with the delicate thin ramen noodles.
The main spiciness comes from the chili powder sprinkled on it. It doesn't actually taste too spicy, and it's a smooth spiciness.
Fujiwara miso ramen:
Miso is actually quite refreshing compared to tonkotsu, and the rounded texture is balanced and quite delicious.
Kanto cooking:
The ones I still remember include lozenges, cabbage rolls, bitter melon envelopes, and potatoes.
Lozenge comes from the Japanese pronunciation and is actually very soft cod tofu.
The cabbage roll has a good amount of meat, and the bitter melon dumpling is a relatively rare Kung Fu dish.
The oden is cooked with the sauce provided by the store, which is quite mild and delicious.
Overall, I personally think Akamen Factory is the best among the ramen in the Shimo-shinjo area. Maruyoshi nearby is also good, but just a little bit behind.
