Located next to the government housing on Dongda Road in Hsinchu, "De Yi Beef Noodles" is a traditional beef noodle shop that embodies a strong military dependents' village style. The shop is not large, and its decor is simple; the environment cannot be described as exquisite. However, once you step inside, you can feel the familiarity of the local patrons. The atmosphere is plain and friendly, just like that neighborhood noodle shop you grew up eating at.

This time, I ordered the "Beef Noodle (Small)."
The bowl contains four pieces of beef, which is not particularly tender. The highlight is definitely the broth; it’s savory and robust yet not greasy — the kind of soup that makes you want to keep sipping until it’s finished. The noodles are cooked to the perfect firmness and do a decent job of soaking up the broth, resulting in a well-balanced bowl of beef noodles.

As for the "Dumplings,"
you should also give them a try. You can definitely tell they are handmade. Although they are not large and the filling isn’t overflowing, the meat is simply seasoned, and the skin is thin and chewy. They are light and not greasy, made with quality ingredients 🥟.

For the "Braised Delicacies,"
I ordered dried tofu, kelp, and braised eggs. Among them, the dried tofu performed the best; it is flavorful and retains its chewiness, enhanced by a generous sprinkle of chopped scallions, making it simple yet satisfying. The other braised items were decent but unremarkable.

Overall, "De Yi Beef Noodles" is an affordable old-school noodle shop, particularly suited for diners who enjoy homey flavors and a nostalgic atmosphere. If they could make slight improvements to the dining environment in the future, it would be an even more appealing choice for snacking. If you find yourself on Dongda Road, why not stop by for a bowl of beef noodles and rekindle those pure taste sensations!
