How long has it been since you've tasted a bowl of ramen with a Japanese flavor in Taiwan? Not only do the flavors closely resemble those in Japan, but the decor inside the restaurant is also thoughtfully designed, making you feel as if you are on the streets of Japan. Today, I'm introducing a ramen shop that aims to recreate the local atmosphere of Japan, insisting on using homemade noodles without preservatives, paired with rich pork bone broth simmered for a long time, fully showcasing the essence of traditional Japanese methods while preserving the most natural flavors of the pork bone...
✅ Hakata Tonkotsu Ramen: NT$260 for the loaded version, which includes double pork chashu, a soft-boiled egg, three pieces of seaweed, along with basic ingredients such as bamboo shoots and wood ear mushrooms. The noodles are made from whole grain, straight noodles. This type of noodle incorporates whole grains during production, enhancing dietary fiber and nutritional value, and gives off a faint wheat aroma; however, the texture is somewhat rough. The broth is a rich pork bone soup, but drinking too much can make one feel greasy and somewhat porky.
✅ Yuzu Salt Clear Chicken Soup Ramen: This ramen features chicken, pork chashu, and a soft-boiled egg, topped with pickled tomatoes. This bowl uses medium-thick noodles. Upon entry, the refreshing scent of yuzu comes forth, but it is soon followed by a salty flavor, making it a broth that can't be consumed for long. The chashu performance is standard.
✅ Crispy Fried Gyoza: A serving of five, with a crispy outer layer and soft filling. However, the filling is somewhat scant, making the overall experience feel more like tasting the outer crispiness rather than the filling, which lacks presence.

The first bite of this ramen leaves a strong impression of richness and hearty ingredients. However, as time goes on, the saltiness and greasiness of the broth gradually become apparent. On a positive note, the restaurant offers free refills for both broth and noodles, allowing customers to adjust based on their needs. Additionally, you can choose the type and texture of the noodles, which is quite thoughtful. Overall, I think it’s worth a visit to experience it once.
