“Every time I go to the Luodong Night Market, I have to buy one to eat!” - by me, who always rushes straight to this stall at the Luodong Night Market.

<About the dish 🥣>
They only sell oyster omelets. The outer layer is fried until crispy, but it can become hard if left out for too long, so it's recommended to eat it while it's hot.
The filling includes Sanxing scallions, a little bit of meat, vermicelli, eggs, and oysters.
I personally think the amount of oysters is just right, and they are fried without becoming too dry, retaining some moisture.
If you don’t like half-cooked eggs, it’s recommended to let it sit for a bit before biting into it after frying. If you love half-cooked eggs and aren’t afraid of hot food, you can bite right into it as soon as you get it; I think it tastes best fresh out of the fryer.
<About the staff 👨🍳>
The owner is quite nice and very approachable.
The boss focuses on making the food, so there isn't much interaction with customers.
<About the environment 🐾>
Located inside the Luodong Night Market, you might have to walk a little bit.
