The Ji Xing Bakery, now in its sixth generation, is truly impressive for continuing a legacy of passing down the business from one generation to another. However, today I mainly want to share about the noodle stall located in the front (which is opened together with the bakery). Previously, my family bought Ji Xing's mung bean pancakes and found them delicious, so we decided to try their noodles.

Firstly, this traditional small noodle stall is located in the arcade of Ji Xing, spanning across two shops, so there's actually a lot of space. The highlight is that the environment is very clean! Although it's summer and there’s no air conditioning, making it a bit tough (there is a very powerful electric fan), the cleanliness of the place really adds to its appeal. The dishes are all reasonably priced.

  • Yangchun Noodles (Small) $40 (Large) $60
    The difference in bowl sizes can be seen in picture four; I think the portion varies quite a bit, haha.
    The owner will ask if you want soup or dry noodles—I’m on the dry noodle side🙋🏻‍♀️. The noodles are topped with minced meat, and the flavor is quite simple; I feel that if there was just a bit more meat flavor, it would be just right. It’s basically an ordinary noodle dish.

  • Braised Delicacies - My plate $120
    What impressed me the most was their seaweed, which is different from seaweed sold elsewhere. After asking the owner, I learned that he doesn’t use commercially available rehydrated seaweed, but instead sources it from Japan. This little detail really added to my impression➕. The texture and flavor are quite different from what you find outside, and I think it’s really tasty and a special experience. There are also some dried tofu, pig skin, and braised eggs, which can be enhanced with the spicy sauce on the table.

  • Wonton Soup (Small) $45 (Large) $60
    The picture shows the large portion; I didn’t taste it much, so I won't comment much, but my family said the meat flavor is strong and the broth is quite tasty (in a good way).

One of the reasons I like traditional noodle stalls is that my mood feels very calm and pure while eating. The simple service and dining process contribute to this feeling. Although it’s located on the roadside, when there are no cars passing by, all you can hear is a little bit of chewing sound, gaining a sense of tranquility amidst the noise (I know it sounds odd, but I always feel very satisfied after dining at a noodle stall).

Also, the negative reviews on Google mostly talk about the service attitude. To be honest, I could instantly feel that the owner and his family are of a reserved and taciturn nature. The owner wears one wireless earphone to listen to music, but when asked a question, he responds very calmly and seriously. There’s absolutely no sense of bad attitude or rudeness at all, which I really didn’t mind. However, if someone expects enthusiastic service, I wouldn’t recommend dining here.
