The "French-style clarified ramen" is stunning; as soon as you enter the restaurant, the aroma of the simmering broth fills the air, with an open kitchen island on display. The restaurant isn’t crowded, and surprisingly, you don’t need to queue on a holiday evening, making this gem somewhat overlooked.
This place offers warm water instead of iced, and there are counter seats; one of the few drawbacks is that the lighting direction is not ideal, as shadows can obscure the bowl of noodles when you’re eating at the counter.
"I just had to close my eyes to savor it," I said, taking a sip of the broth, and the umami flavor surged wave after wave. "Ah, this saltiness is not to be underestimated!" My inner monologue couldn’t help but praise this bowl of "Truffle Cream Chicken Soup Ramen." After sipping a few more times, I blended in some truffle cream from the edge of the bowl, making it even more delicious, significantly elevating the tasting experience of this so-called French clear soup.
However, perhaps due to the outstanding performance of the chicken broth, which has quite a complex flavor, the flavored egg and chicken breast rolls with wild mushroom puree seem less prominent. The thin noodles are very suitable for the clear broth dining experience.
