The Mino Handmade Knife-Cut Beef Noodle Shop is located on New Taipei Boulevard in Sanchong. After getting off the Zhongshan Bridge heading from Xinzhuang towards Sanchong, you can easily see the prominent sign.
Today, I enjoyed the beef noodles, which cost 140 NT dollars.
Beef Noodles:
The large bowl is priced at 140 NT dollars, which is considered a normal price in Taipei. Currently, beef noodles in the Taipei area are almost all above 120 NT dollars. You can choose thin noodles, but I didn’t switch.
The speed of the restaurant’s service is extremely fast; it seems that the noodles are prepped and cooked during peak dining times, so when a customer places an order, they just need to add the specified broth and toppings. I had completed my order, and just 30 seconds later, the steaming hot beef noodles were in my hands.
The knife-cut noodles are slightly thicker, with a chewy texture; they are not very Q (springy) but are rather wholesome. The broth has a traditional braised flavor, but it is not as salty as that of Yongchuan. The meat chunks are generous, and while they are not dry, a few pieces have a bit of tendon.
Because the bowl of soup was quite large, I accidentally added too much spicy beef oil, which made it clump together and cool down towards the end. I then asked the restaurant for an extra ladle of hot soup, and they were very generous with it.
Overall, this is quite a tasty beef noodle shop that is not overly expensive. If you're in a hurry, the speed of the service will amaze you.
The texture of the noodles resembles the style of the old beef noodle stand on Zhengzhou Street in Taipei. The broth is similar to that of Little Wu and Fuhong on Luoyang Street. The shop is quite spacious, and the dining atmosphere is very comfortable.
In fact, there is another shop with the exact same name and sign on Xining North Road in Taipei, but I didn't inquire further about the relationship.
