The A-Po Fish Noodle Shop located in Beigan is a renowned local eatery famous for its traditional snacks. This time, I ordered fish noodles, fried fish noodles, a mixed fish ball soup, and sea swallow's nest golden dumplings, all of which showcase the unique seafood flavors characteristic of Matsu and represent a classic combination that must be tried when visiting Beigan.
First, the signature fish noodles are made from fish paste shaped into noodles, which is a rare traditional delicacy in Taiwan. When served, they carry a subtle seafood aroma. The texture is unlike that of flour noodles; instead, it possesses a unique firmness and slight chewiness from the fish paste. The broth is sweet and fresh, with a hint of ocean flavor that isn’t overly salty—simple yet satisfying. With the added green onions and fried shallots, the taste becomes more layered.
The fried fish noodles offer an entirely different experience. The outer layer is lightly crispy, while the inside maintains the firm texture typical of fish noodles, making it a great choice for a snack.
Next is the mixed fish ball soup, which allows you to enjoy various forms of fish paste in a single bowl. The broth is refreshing and not greasy, making it very pleasant and a perfect pairing with the fish noodles.
Particularly notable are the sea swallow's nest golden dumplings. Sea swallow's nest is a common seaweed in Matsu, distinguished by its slightly sweet and salty flavor, and can be considered a local delicacy.
Overall, while the A-Po Fish Noodle Shop has a humble environment, its authentic flavors and generous portions make it a must-try representative snack in Beigan.
