This is my first time dining here, and I chose the signature pork intestine vermicelli, pork uncle rice, and spare ribs with fried tofu.
The pork intestine vermicelli is amazing! It has the taste of traditional flavors, with a broth that has the aroma of Four 神汤 (herb soup). The pork intestines are generous and very clean, with no bitterness at all. The tenderness is just right, and the soul of the dish—the pickled vegetables—is plentiful. Highly recommended! It’s been a long time since I’ve had such delicious pork intestine vermicelli.
The pork uncle rice is similar to braised pork rice, with the meat having a texture more like minced meat. It’s chewy and not greasy. The pickled cucumbers on top are also very crunchy and flavorful.
The spare ribs as a side dish are very tender and delicious as well. I recommend dipping them in the boss’s homemade chili sauce.
