The oil and bitter melon are cooked well and not too hard. The stinky tofu is said to be steamed and looks like braised, but it's really smelly. I don’t quite understand the difference between vegetarian stinky tofu and meat-based stinky tofu, but I still prefer the meat-based stinky tofu with crispy skin, which is a classic! My most common orders are assorted noodles, braised noodles, fast food, fried stinky tofu, steamed stinky tofu, fried dumplings, and shredded chicken noodles with eggs.
