I went to a delicious ramen shop in Juso 🍜

The restaurant is called "Kinmen & Kin Soba," and it's located just off the East Exit of Juso Station in a shopping street, down a small alley 🚃

I went there in the early afternoon, but it soon became packed! 🍜

I ordered the Juso Tsukemen (double noodles) [300g] 🍜 for 1,500 yen.

This is a rich, chicken-bone soup that fuses techniques from Michelin-starred restaurants. The moment you take a sip, the umami and smoothness of the chicken spreads throughout your mouth. It's rich yet has a clean aftertaste, a sublime bowl.

The "plump chewy noodles ★ slippery smooth noodles" allow you to enjoy two different textures at once, making this a luxurious double option. You can enjoy the chewy elasticity and smooth finish simultaneously—it's an evolved version of tsukemen!

The tsukemen served included:
Kinmen noodles 🍜
Whole wheat noodles
Cubed chashu pork 🐷
Onion 🧅
Lemon 🍋
Tsukesauce (chicken bone broth) 🐔

The tsukesauce was rich but not overwhelming, and paired well with the chilled noodles—delicious! The Kinmen noodles were yellow, super chewy, and had a great bite, perfectly coating the soup, tasting amazing. The whole wheat noodles were even thicker and chewier, with an incredible texture‼️ Both types of noodles paired superbly with the tsukesauce and were delicious! 🍜

The cubed chashu was a bit bland on its own, but when dipped in the sauce, it tasted fantastic! 🐷

The onion was crunchy, and it was even more delicious when dipped in the sauce than on its own 🧅.

Squeezing lemon for flavor change added a refreshing twist and was very tasty 🍋.

It was a new sensation of tsukemen and delicious! ✨ There are many other items on the menu, so it's a place I’d like to visit again! 🍜
