Today after work, I wasn't sure what to eat, so my colleague took me to the Dongmen shopping district to try bamboo noodles.
Bamboo noodles are a traditional Guangdong specialty, made by pressing dough using bamboo poles. The dough is repeatedly flattened using large bamboo poles until it becomes elastic, then hand-cut into thin strips, which gives the noodles a unique chewiness and resilience. Bamboo noodles are typically served with ingredients like shrimp roe, dumplings, or roasted goose, and the broth is refreshing and delicious. It's a popular choice in the daily diet of Guangdong people for dishes like wonton noodles or tossed noodles.
This bamboo noodle shop isn't very big, and there are only a few seats, but the flavors are quite good, and the environment of the shop is pretty clean.
My colleague ordered the dry version with large intestine bamboo noodles and paid for a bowl of clear soup. I ordered the wonton bamboo noodles (soup), and the wontons were quite large; I thought they were pretty good, with lots of meat filling and sizable shrimp. The bamboo noodles were very chewy, a good noodle, and the broth tasted good at first sip, though I’m not sure if there was any science or finesse behind it!
