🌟 If you think of tofu pudding, the first thing that comes to mind is Anping.

Story
In the 59th year of the Republic, when we were still using traditional shoulder poles and carts, we referred to the first-generation founder Huang Qing-tong by the name "Tong." Customers often called him "Tong-e" or "A-Tong Bo." By the time we established our storefront in the 82nd year, we felt that the single word "Tong" wasn't enough, so we asked a friend for help in naming the shop. He suggested two names: Anping Tofu Pudding and Fort City Tofu Pudding. We thought, since we lived in the Anping District, we would choose "Anping Tofu Pudding" (at that time, Anping in Tainan City was still an underdeveloped area; it only began to develop around the 86th year of the Republic). Later, we gradually made a name for "Anping Tofu Pudding," and soon competitors began to emerge. Around the 90th year of the Republic, we tried to apply for a trademark but found out that place names cannot be trademarked, so we initially applied for the "Tong Ji Tofu Pudding" trademark, incorporating "Tong Ji" into Anping Tofu Pudding, which then became "Tong Ji Anping Tofu Pudding."

The meticulous and rich flavor of Tong Ji Anping Tofu Pudding is its greatest selling point. The founder, Huang Qing-tong, stated that to create characteristic tofu pudding, many on the market use agar powder as a thickener, which not only loses the original taste and aroma of tofu pudding but also completely detracts from its texture. He reminisced about the traditional tofu pudding aroma from his childhood and decided to stick to traditional production methods. They use non-GMO organic soybeans that are twice as expensive, and no preservatives or flavorings are added during the process, ensuring the snacks are as natural, healthy, and delicious as possible.

Introduction
The "Anping Tofu Pudding Main Store" is located on Anbei Road, featuring about 200 seats. It not only sells the shop’s signature tofu pudding but also offers snow ice, soy milk, and sweet potato balls. There is a free parking lot nearby.

As someone who loves sour things, I really think this dish is classic. The combination of pearl tofu pudding is quite common, but after adding lemon, the sweet and sour taste is really great and not overly sweet. The toppings in the southern region tend to be sweet, and adding lemon perfectly balances that.

Thoughts: I really can't help but stop by and eat whenever I pass by. The delicious taste of the food reminds me of its memories and locations; Anping Tofu Pudding is probably my benchmark for tofu pudding!!
