This cold noodle shop has been open since I was a child. It seems to sell more items now, but I still mostly order cold noodles. The special thing about Chiayi cold noodles is that the sauce uses what we Chiayi people commonly call white vinegar. Something that looks a lot like mayonnaise🤣
The cold noodle noodles are a relatively wide and flat type. When paired with the cold noodle sauce using white vinegar, sesame paste, and a little garlic, it is very refreshing and delicious. If you like spicy food, it is recommended to add more spiciness, which will further enhance the taste.
The ingredients are basically just shredded cucumber😅
