5 minutes walk from Shijo Station on the Kyoto Municipal Subway.
This ramen shop specializes in salt ramen made with homemade noodles and has been awarded the "Top 100 Ramen Shops" award for several years.
The shop is closed on irregular days, so I couldn't find the time to visit, which made this my first visit.
The restaurant only has counter seating, and the simple interior creates a homey atmosphere.
The soup is based on flavorful chicken bones, and the refreshing taste of the dashi stock is combined with mellow salt, making it light yet rich.
The noodles are medium-thick and straight, with a wavy texture. They are boiled until soft, giving them a chewy texture and allowing them to crumble apart, and they mix well with the soup.
Toppings include char siu, spinach, green onions, and seasoned egg.
The pork slices were rolled up and were moist, tender, fatty and juicy. They were seasoned quite strongly and went perfectly with the light soup.
The seasoned eggs are well-seasoned and have a rich flavor.
The crunchy texture of the green onions was great, and their moderate bitterness went well with the soup.
