Located on Section 1 of the Hsinchu Railway, "Jiang Hao's Flavor" is a small restaurant that specializes in affordable noodle dishes. Although the shop isn't large, it has been operating steadily since its opening and has built a good reputation among many regular customers.

Seafood Udon Noodles
First of all, the ingredients are genuinely abundant; each bowl includes clams, basa fish slices, shrimp, and squid. While the variety isn't complicated, everything is fresh. The clams are plump and sandy-free, the basa fish is tender and doesn't have a fishy taste, and the shrimp is also very fresh, making you silently appreciate each bite 🦐.

The broth is equally impressive; it’s a light and sweet seafood soup that makes you go "mmm!" from the first sip. It's not just salty from MSG or seasoning powder; it captures the natural freshness from simmering clams and fish. The broth has a slight salty fragrance but isn't overwhelming, enhancing the overall richness and depth of flavor, making it hard to stop at just one bowl.

The udon noodles themselves are above average, with a chewy and smooth texture that doesn't become mushy or overly hard. They perfectly absorb the broth. On a chilly day, a bowl of this noodle soup is just right!

What’s even more admirable is that since its opening, the shop’s flavors and quality have hardly changed, and the environment has always been kept clean and tidy. For an affordable noodle shop, this level of consistency is indeed rare. The dining space isn't large, but the seating arrangement is reasonable, and the table turnover speed is quick, making it suitable for lunch or a warm bowl of soup noodles after work.

In summary, "Jiang Hao's Flavor" offers seafood udon noodles that are the kind of deliciousness you become addicted to after one taste. I remember visiting shortly after it opened and my overall impression was that the place was clean with genuine ingredients. However, I tried several types of noodles at that time, and they were average, not making a deep impression on me. Since then, I’ve only ordered the seafood udon. If you, like me, enjoy seafood noodle soup, it’s definitely worth the trip. Although the competition is fierce around Section 1 of the railway, this shop has been able to maintain its foothold, thanks to its carefully simmered, unpretentious yet substantial delicious noodle soup.
