Kettle Road No.1 Hotpot, an all-you-can-eat restaurant, hails from Minxiong, Chiayi. Having survived through four years and the pandemic, it certainly has its strengths.
The seating in the restaurant is limited, primarily focusing on individual hotpots, but you can also choose a personal yin-yang pot. The broth is all natural and freshly made, with a particularly distinctive rich milk broth—made by steaming pumpkins before boiling down the soup, resulting in a strong pumpkin flavor and naturally sweet fragrance, while the milk aroma is more subtle. The sukiyaki broth is excellent for dipping meat, with a well-balanced salty and sweet taste that pairs perfectly with rice.
The garlic clam and black-bone chicken soup is also nice; the broth is rich, and the garlic complements the clam flavor well. However, the chicken has a slightly dense texture and is a bit lacking in flavor, but the portion sizes are generous.
What adds to the positive experience is that they top up with "original broth," ensuring that it doesn't become more diluted as you cook. There is also a self-service bar for vegetables and drinks that you can enjoy infinitely. During the weekdays for lunch, it’s only $199, which really offers great value for money.
