This place, 桂Full紅麵線 (Gui Full Red Noodle), located in Yilan, has been on my list for a long time and I finally came to try it. I arrived around 9 a.m. on the eve of the Lunar New Year and only noodle dishes and egg pancakes were left. I ordered the following items.

• Mixed Noodles (65 TWD × 3): Generous portions, the meat pieces are large and solid, the large intestine is flavorful, and the soup has a hint of smoked fish aroma. The noodle portion is sufficient, not too watery, and the店內 (in-house) chili enhances the flavor even more.
• Original Egg Pancake (30 TWD): The texture was slightly affected as it was takeout and the pancake skin got cold.
• Basil Roast Meat Egg Pancake (65 TWD): The combination of basil and roast meat delivers the fragrance of basil, and it's not overly salty.
• Korean Kimchi Pork Egg Pancake (65 TWD): A touch of spiciness, the sourness of the kimchi pairs well with the pork, creating a rich flavor.
• Taro Mash with Meat Floss Egg Pancake (70 TWD): The taro mash is delicate, and the meat floss is salty and fragrant; I quite like the sweet and salty combination.

Overall Experience
The noodles are impressive, with abundant ingredients and rich flavors, and the addition of chili elevates the taste even further; the egg pancake selection is varied and well-seasoned overall, but I recommend dining in to better preserve the texture of the pancake skin. It's worth coming back to try more items!
