Since childhood, Shu has loved to eat QQ chewy noodles. From Tainan City to Xinying, I unexpectedly discovered this hidden gem of a noodle dumpling shop in the streets, which may not seem eye-catching from the outside but has real skill in its dishes. For friends who love noodle dumplings, please don’t miss this place when passing through Xinying!

We have visited for the second time, solely for their noodle dumplings. The soup and dry kinds have different features, but the common point is that they are astonishing when put in your mouth. The handmade noodle dumplings are substantial and chewy, making you want to shout that they truly have skill.

The soul of the #soup noodle dumplings is the "soup." If the soup doesn't taste good, no matter how QQ the noodle dumplings are, it loses the charm of finger-licking goodness. However, their broth is refreshing and slightly sweet, making you want to keep drinking. It seems to be based on a rich bone broth, carefully simmered with vegetables; drinking a lot of it won't leave you thirsty.

The soup is rich in shredded meat, shrimp, and vegetables, but the highlight is that half-cooked egg🌻. Any ingredient paired with that golden, thick egg liquid makes it hard to describe the emotion evoked when tasting such food with the word "perfect."

The soul of #dry noodle dumplings lies in the braising sauce. Their sauce is exceptional; it seems like an ordinary Taiwanese flavor while being salty and sweet. The minced meat is generous and shiny, highlighting the craftsmanship of a local eatery that values detail. Various ingredients such as vegetables, fish balls, and shredded meat are placed generously, colorful and appetizing. Holding such a bowl in your hands is satisfying and makes your mouth water.

The #smoked pig ears are a must-ordered side dish. How can they be so tantalizing? The smoky flavor permeates the fragrant and bouncy pig ears, leading you to want more. At $20 per plate, it always feels insufficient, but it's actually a reasonable price.

Although the egg drop soup and blanched vegetables are not as highlighted as other dishes, they complement the meal well. The protein and fiber from the vegetables can be made up for. One small drawback is that the sauce for the blanched vegetables feels a bit too salty, and I hope the shop can make the environment cozier. But these are really not the main points; the glorious noodle dumplings and pig ears are irreplaceably delicious and will surely bring us back for a visit again!
