Not often do I travel to Hsinchu, but for the sake of eating藏壽司 (Hidden Sushi), we went there, just the two of us XD

# There are clearly many places to enjoy delicious food, yet we ran to Hsinchu for藏壽司.

Dishes
Cucumber thin roll - when eating too many greasy sushi, I really recommend eating some cucumber to cleanse the palate.

Medium fatty tuna gunkan - quite fresh and sweet in taste.

Fried shrimp - you can eat it with the shell on; I felt like having some wine with it. (My sister said)

Grilled three pieces - honestly, they looked pretty dry when they were served, but they still tasted fine. Why must there be cheese?

Coffee swirl soft serve - that bitter concentrated coffee combined with milk soft serve, paired with pudding at the bottom, creates a nice balance of bitterness and sweetness. It was quite good XD but desserts are always new, so I won't order this again next time.

There were too many dishes to describe each one in detail, so I'm just mixing up the words.

Service
This place at Hsinchu High-Speed Rail had a lot of people; we waited in line for almost two hours. However, the staff was very serious about explaining and serving each dish. I give it four stars.

Environment
There were quite a few waitstaff, and each one cleaned up quickly, racing to turn tables, which I understand. They also did proper disinfection. I would give three and a half stars.

Review
During peak dining hours, the turnover rate was quite fast at around 60 minutes, and the service attitude was excellent. As for the food, compared to sushi rice I have had before, theirs was slightly less, and the presentation suffered due to the busy situation, so in that regard, I would give three stars.

Additionally, since most chain sushi may have similar quality, objectively speaking, they were somewhat lacking.
