This scallion pancake at the Normal University Night Market has been a familiar face for many years, and it is also one of my daily choices. Watching the price of this shop slowly increase, sometimes I feel full after eating it.
I usually order scallion pancakes with eggs. If you don’t specifically request it, the boss will add garlic sauce for you; you can also add extra white pepper or chili.
In addition to the general taste, if you want to eat healthier, you can choose cabbage, egg and scallion pancakes; I also like the nine-layer egg flavor, which tastes more fragrant; in addition, there are bacon, ham, smoked chicken, corn and vegetables. Preserved fruits and other ingredients can be paired with each other. If you tend to get tired of the same flavor or are afraid of not being full, you might as well try some changes.
Payment is made through self-service change, which is more hygienic. Change can be put directly into the change box placed by the boss at the stall, while hundred-yuan bills can be pressed under the paper weight and change is made on your own. I don’t recommend taking thousand-yuan bills, as it will cause more trouble for the boss.
