I always order braised beef tendon in the past, and my favorite is his soup with a big piece of white radish. It has a fresh and sweet taste, which may be related to his claim to cook it with vegetables for a long time. The meat is soft and tender, but not as good as the top beef piece. I think it's just plain and not very tasty.
Overall, it's highly recommended, but if you're afraid of spicy food, you'd better order braised in soy sauce.
