In Hsinchu, which is dubbed a food desert, the only choice I can endorse at Shulin Tou Night Market is — Hong's Restoration Hall Salt and Pepper Chicken. This is a salt and pepper chicken that truly showcases soul and sincerity. It attracts a loyal crowd of customers every week, and since my first taste, I've had a hard time turning back; I basically only eat here when I come to Shulin Tou Night Market.

The seasoning is made using traditional Chinese medicinal herbs crafted into a unique spice blend. It not only boasts a rich aroma, but also offers a distinct flavor profile with clear layers and a warm aftertaste that standard salt and pepper chicken simply cannot replicate. The vendor also thoughtfully provides options for adjusting the spiciness (from not spicy to very spicy) as well as whether to add onions, ensuring that every portion of fried food caters to personal taste.

The fried chicken feet, squid balls, triangle bones, salt and pepper chicken, and octopus fritters are all of high quality. I particularly recommend first-timers try the fried chicken feet, which are crispy on the outside and soft on the inside, without being dry. After trying them, you will have a newfound appreciation for how delicious chicken feet can be.

The fried tofu is my personal favorite; it's crispy on the outside and tender on the inside with an enticing aroma, fried just right so it's not greasy. However, a small reminder — during peak times like Friday, although the quality is still good, the frying and seasoning consistency can vary a bit. On a Wednesday night, for example, I had a portion that was fried to a perfect crispiness with a more captivating aroma, leaving a lasting impression on me.

The sweet potato fritters are another reliable and classic item, crispy and not hard or dry. Paired with Chinese herbal spices, they make it impossible to stop eating. The rice blood cake performs decently; it's oily and has a soft chew, making it a suitable companion dish.

In summary, whether you prefer bold flavors or those that highlight aromatic layers, this place can satisfy you. I recommend visiting on a Wednesday when there are fewer people, as the quality is more stable, allowing you to truly appreciate the charm of the fried foods crafted with care.
